How to break off a long term relationship?

I've been dating this girl for 5 years now. We haven't really lived close to each other for most of that time and have never really spent more than a couple of weeks together in one go.
However, we've taken an extended holiday around Europe and I'm realising that we just don't have all that much in common beyond acting (we're both trained actors and like going to the theatre).
I won't go into all the details but aspects of her personality that I hadn't really noticed before are starting to become annoying to me and I feel like I spend more time rolling my eyes and muttering under my breath than I do just enjoying her company.
I think we're also at different points in our lives (a bit cliché but still true) which doesn't really help.
The biggest problem is that we're still on the holiday. She's going home in a few weeks but I still want to see a few places before I go home. I might even find some work and stick around for longer.
So here's my conundrum: so I break it off before she leaves for home, after she leaves but before I do, or after I get home as well (Bearing in mind that it could be anything from 2 weeks to 6 months after her)?
