What's the best combination of dashcam, gopro,..etc. to make youtube videos?

Since I've started my new career which is truck driving, I've been thinking of making video along the way about the things that I see on the road especially when it comes to driving, maneuvering, parking (altho I ain't that good on it)...etc. just to give people a better understanding about the things we deal with on daily basis or at least educate them even a bit.

So, this is the setup I'm planning on doing:
I want to have about 3 camera system, 1 mounted on my dash serving as a dashcam, and the other 2 mounted on each rear view mirrors.

My budget can flexed to $800 but I hope I don't go that far.

Also, I do not own the truck so the ease of taking out the cameras and putting them back on should be something to keep in consideration.

My skills:
I'm kinda the average when it comes to recording and editing videos.

Since I haven't taken a final decision regarding this "idea" I'm open to all kinds of suggestions, even the crazy ones.
